Holiday Mailing Tips

During the hustle and bustle of the holiday season, the last thing you need to worry about is mailing your gifts. Follow these United States Postal Service (USPS) tips to make sure your packages arrive intact and on time:

Packaging: Choose a strong box and make sure to insulate your gift with bubble wrap, newspaper, Styrofoam peanuts or plain popcorn. Seal your package with shipping tape, and don't use any string or wrapping paper. Packages that weigh over 1 pound should be taken to the post office for shipping. The post office also carries certain envelopes and tubes that are free with mailing services.

Addressing Packages: Make sure both "TO" and "FROM" addresses are printed clearly, and include apartment numbers and direction information for streets. If you don't know the zip code, do not guess. You can locate correct zip codes at http://www.usps.com. Place your addresses on only one side of the package.

Delivery Speed: The general rule when mailing letters and packages is that if you wait too long, you'll have to pay more. However, for those last-minute mailers, the USPS offers 1-2 day delivery, 365 days a year.

Emergency Ingredient Substitutions

Running out of pumpkin spike while making your holiday pie? Don't Panic! These emergency substitutes can help you out of this and many other holiday cooking binds.

1 cup buttermilk = 1 Tbsp. lemon juice or vinegar + 1 cup of milk. Let it stand for 5 minutes.

1 tsp. pumpkin spice = 1/4 tsp. nutmeg + 1/2 tsp. cinnamon + 1/8 tsp. allspice + a dash of ginger or cloves.

1 cup of red wine = 1 cup of grape or cranberry juice.

1 cup of white wine = 1 cup of white grape or apple juice.

1 cup of butter = 7/8 cup of oil + 1/2 tsp. salt.

1 cup of oil = 1/2 pound of butter

1 egg = 1 Tbsp. water + 2 Tbsp. corn oil

1 tsp. dry mustard = 2 tsp. prepared mustard

1 Tbsp. cornstarch = 2 Tbsp. all-purpose flour

1 tsp. baking powder = 1/4 tsp. baking soda + 1/2 tsp. cream of tarter

1 cup of light corn syrup = 1/4 cup of water + 1 cup of white sugar.

Chocolate-Almond Biscotti

Chocolate-Almond Biscotti
 
 
Ingredients:
1 package of dark chocolate cake mix
1 cup of all-purpose flour
1/2 cup (1 stick) of melted butter
2 large eggs
1 teaspoon of almond extract
1/2 cup chopped almonds
 
 
Instructions:
Preheat over to 350 degrees. Line 2 backing sheets with parchment paper. Combine cake mix, flour, butter, eggs and almond extract in a large bowl. Beat on low speed with a mixer until well blended; stir in almonds. Divide dough in half. Shape each half into approximately 12" X  2" logs. Place one log on each prepared baking sheet and then bake at 350 degrees for 30 to 35 minutes or until a toothpick inserted into the center comes out clean. Remove logs from oven; let cool for 15 minutes and using a serrated knife, cut the logs into half inch thick slices. Arrange slices on baking sheets. Continue to bake biscotti at 350 degrees for 10 minutes. Remove from over and let cool before serving.

Alcatel-Lucent Invests $100,000 in Chattanooga’s "The Gig Prize™"

Chattanooga, Tenn. (October 26, 2011) – Alcatel-Lucent is investing $100,000 in the "The Gig Prize™," a Chattanooga-based initiative to foster the development of gigabit per second Internet applications and business ventures.
 
"Last year, Chattanooga became America’s first and only city to complete a community-wide network capable of delivering up to 1 gigabit per second Internet speeds to every home and business in a EPB’s 600 square mile service area," said Robert Vrij, president of Alcatel-Lucent’s Americas Region. "We’re proud to partner with Chattanooga as this extraordinary city establishes a groundbreaking model for demonstrating the direct linkage between investment in telecommunications infrastructure and economic growth."
 
Vrij made his announcement as part of his keynote address during the Chattanooga Area Chamber of Commerce’s Spirit of Innovation luncheon where community leaders announced an initiative to position Chattanooga as the Gig City™ and unveiled the Gig Prize™.
 
The Gig Prize™ is a competition in which students and entrepreneurs will create and test next generation Internet applications and launch businesses using Chattanooga’s blazing fast Internet.
 
"Chattanooga offers forward thinking entrepreneurs a huge head-start in leading the next generation of Internet commerce," said Tom Edd Wilson, president and CEO of the Chattanooga Area Chamber of Commerce. "The Gig Prize™ will provide the support and connections necessary to develop, prove and fund these paradigm shifting business models."
